Abstract
Plate waste data are commonly used for evaluating effectiveness of food service and adequacy of dietary intake by groups or individual. The most commonly used method of assessing plate waste is actual physical weighing of returned edible food items. A visual method of assessing plate waste has been proposed as less time consuming and more efficient method.<p><p>The objective of this study was to quantify the magnitude the accuracy (bias and the imprecision) of visual estimates used the 6-point Comstock scale. The cross sectional study was performed for 3 months, and the study sample was individual food serving. Collection data of plate waste were carried out by dietitians using the 6-point Comstock scale. Product-moment correlation coefficients were calculated to examine the associations between estimated and actual weights, and paired t-tests were used to determine whether those bias value were significantly different from zero.<p><p>The results showed that the correlation between the converted visual estimates of waste and weight waste were positive and very high, averaging 0,93 (range 0,91 to 0,95). There was no statistical significant difference (p>0,05) between amount of bias in the converted visual estimates, with actual being by an average of 0,5 g (range 0,32 to 0,63). The imprecision of the visual estimated averaged 1,81 g (range 0,11 to 1,24).<p><p>The conclusions of this study was the correlations between the converted visual estimates of waste and weighed waste are positive and very high, therefore the visual estimates of plate waste can be used for as subtitute of food weighing.<p>
